Keto Spicy Fried Rice
Health conscious? Here’s a new take on fried rice minus the carbs and the guilt. A luscious spicy meal that invites you to have a second serving with a smile, knowing it’ll be safe enough for your diet.
Ingredients:
- 2 tbsp Olive Oil
- 2 Eggs
- 1/2 cup Green Onion, sliced thinly
- 2 cups Cauliflower Rice
- Some chopped onion
- ½ cucumber, cut into smaller pieces
- Chicken ham, cut into smaller pieces
- 1 tsp of salt
- 1 tsp of black pepper
- 2 tbsp of Toh’s Daily
Instructions:
- Heat 2 tbsp of olive oil on medium-high heat.
- Crack eggs into the pan (the way you would if you were frying sunny side up eggs).
- Add green onions to pan and use a spatula to scramble the eggs and green onions (~1 minute to ensure egg is fully cooked).
- Put in the chicken ham, cucumber and the remaining ingredients.
Add in cauliflower rice to the skillet. - Mix with a spatula until rice is tender and all the liquid clears (8 – 10 minutes).
