Lotus Root Salad
Harvested in autumn, lotus roots are believed to be beneficial to your stomach and lungs. Did you know young girls in China traditionally drink lotus leaf tea or eat lotus root paste for the purpose of strengthening & keeping their lungs fit? Here’s a Lotus Root salad recipe inspired by a China Sichuan dish.
Ingredients:
- 1 section of lotus root
- 2 fresh red chilies
- 2 garlic cloves, chopped
- 1/4 tsp. sugar
- 2 tbsp. light soy sauce
- 1/2 tbsp. black vinegar
- 2 tbsp Toh’s Daily extra spicy
- 1 small bunch of coriander
- 1 tsp of white sesame
- 2 tbsp hot oil
Instructions:
- Peel the lotus roots and then thinly slice them.
- Wash the lotus slices under running water to remove the extra starch.
- Bring a large pot of water to a boil and then blanch lotus root slices for 1 minutes.
- Transfer them out and soak the slices in chilled water until they are completely cooled. Drain.
- Drizzle light soy sauce, sugar, vinegar and white sesame on the slices.
- Heat vegetable oil in a small pot, add garlic in. Heat over medium to slow fire until aromatic.
- Add coriander stem in and continue cooking for 10 seconds.
- Pour the oil over the slices and add in Toh’s Daily.
- Mix well and enjoy!
