Pattaya Style Fried Egg with Spicy Fried Tofu

Ingredients:
- 1 carrots
- 2 cloves garlic
- Some chopped kailan
- 250g extra-firm tofu
- 2 large eggs
- 3 T. vegetable oil, divided
- 1 cup rice
- Sauce
- 3 tsp soy sauce
- 1 tsp sesame oil
- 1 tbsp Toh’s Daily
Instructions:
- Peel and julienne carrot into thin strips.
- Peel, then mince the garlic.
- Drain tofu and pat dry with a paper towel. Cut into small cubes.
- Make the sauce by stirring together soy sauce, sesame oil, and Toh’s Daily.
- Add 1 tablespoon of vegetable oil to a large nonstick skillet or wok. Bring to medium-high heat.
- Add tofu and stir occasionally until lightly brown on all sides (about 5-8 minutes).
- Remove the tofu from the pan and add another tablespoon of oil.
- Add garlic, carrots, and kalian.
- Cook for 5 minutes, stirring frequently. Carrots should be approaching crisp-tender.
- Add rice and stir with a wooden spoon or spatula until fully incorporated, breaking up any chunks of rice.
- Add back crispy tofu.
- Stir for 1 minute, then pour in sauce. Stir until sauce is incorporated.
- Lastly, fry an omelette, put it as base and serve with the fried rice. Enjoy!
